Our cheesemakers are dedicated to producing finely crafted semi-soft artisan cheeses made from one of the richest and healthiest cow's milk which is Guernsey.  With access to the milk of a single herd and the issuance of a "rare" new license for a creamery, we are proud to revive a cheesemaking tradition in Niagara that goes back to the early beginnings of our nation.
